My little sister has a gluten intolerance but also has a sweet tooth at times. It can be hard to find a gluten free cookie recipe that tastes good. Here is one that we have tried and all love.
Preheat the oven to 350 degrees Fahrenheit
Combine:
1 cup of peanut butter
1 cup of sugar (brown sugar makes a nice rich tasting cookie)
1 egg
Mix all of these ingredients together. Plop down tablespoon size dough portions onto the cookie sheet with 2 inches between each plop. Cook for 10 minutes. These gluten free peanut butter cookies are real simple, but they taste great.
