Chocolate Caramels

It took me four tries before I got this figured out.  It is also a little time consuming to make these, but it is worth it.  If you don’t cook it long enough, it makes a great ice cream topping.
Ingredients:

1 can of sweet and condensed milk

3 rounded tablespoons of cocoa

1 tablespoon of butter

Put the sweet and condensed milk into a pan and stir in the cocoa. Make sure that the cocoa is mixed in well. Put in the tablespoon of butter and turn the stove to medium-low heat and constantly scrape the bottom with a spatula. If you hear a sizzle as you stir, then it is too hot and you will need to turn down the heat. This will take 15 to 20 minutes. You will know that it is about ready when you can scrape the bottom of the pan and the mixture is a little thicker than pudding. Pore this onto a sprayed cookie sheet and let it cool completely. I suggest sticking it into the fridge. You will know that you got it right if it has a soft caramely consistency after it is cooled. Grease you hands and form it into little balls.

Gluten Free Peanut Butter Cookies

My little sister has a gluten intolerance but also has a sweet tooth at times.  It can be hard to find a gluten free cookie recipe that tastes good. Here is one that we have tried and all love.
Preheat the oven to 350 degrees Fahrenheit

Combine:

1 cup of peanut butter

1 cup of sugar (brown sugar makes a nice rich tasting cookie)

1 egg

Mix all of these ingredients together.  Plop down tablespoon size dough portions onto the cookie sheet with 2 inches between each plop. Cook for 10 minutes.  These gluten free peanut butter cookies are real simple, but they taste great.

Football Chocolate Covered Strawberries

We made these chocolate covered strawberries to celebrate the super bowl.  These chocolate covered strawberries would also make a great treat for football game victory celebration or just any old football game party.
Directions

1.       Make chocolate to dip strawberries using the Strawberries dipped in chocolate recipe posted on our blog.

2.       Milt ¼ cup white chocolate using the same method that was listed above.

3.       Put the melted white chocolate into a sandwich bag and cut a very small hole in one of the corners. Use this as an icing bag to make the football grips on the strawberries.

4.       Just a small tip.  We found that making the football pattern works best when the chocolate dipped strawberries are very cold   

Rollo Cookies

I cannot remember where I got this recipe.  These cookies are great if you are in the mood for chocolate and caramel. Now without further delay, lets learn how to make these beauties.
Preheat the oven to 375 degrees Fahrenheit (I always forget this port)

Combine:

1 egg

1/4 cup water

3 Tablespoons of vegetable oil

1 box of devil's food cake

After mixing all these ingredients together, use a tablespoon measure to measure out enough dough to wrap around an individual (unwrapped might I add) Rollo. Grease a pan and place each of these Rollo wrapped cookie balls on the pan with about 2 inches between each other. Bake for 9-10 minutes. Immediately after the cookies are done and taken out of the oven, use the spatula to smash them.

The Best Fudge You Will Ever Taste

My family is obsessed with See's Candy. Whenever my grandparents came to visit us from Texas, one of their first stops would be to the mall to get See's Candy. We have a recipe that has been in the family for years that, according to ledgend, is the very recipe that See's Candy uses to make their fudge. I cannot vouch for the validity of this claim, but I do know that this recipe makes some amazing fudge.

In a large bowl combine:
2 1/2 – 3 cups chocolate chips (semi-sweet or milk chocolate)
1 8oz jar marshmallow cream
2 cups walnuts (if desired)
1 teaspoon vanilla extract

Set all these ingredients aside

In a large heavy-bottom bowl place:
1/2 teaspoon salt
1 can evaporated milk
4 1/2 cups sugar

Heat the sugar, milk and salt mixture to a rolling boil stir regularly. Boil for 10 min, stirring constantly, over medium-high heat. Make sure that you do stir it constantly because it can burn easily. After the 10 minutes of boiling is up, pour the contents of the pan into the large bowl with the other ingredients and mix until you have a smooth and creamy texture.

Place this all into a well greased pan and let it cool.

Make sure you have plans to give some of this away or else you might eat the whole pan.

Strawberries in Chocolate: make your own chocolate covered strawberries

Two of the greatest things in life are chocolate and fresh strawberries, but strawberries with chocolate (when combined) are even better.  Chocolate covered strawberries make are great Valentine’s Day dessert.  In this post we will help you to make this delectable treat so that you can treat yourself without breaking the bank.
You will need

·         a double boiler pan or a microwave safe bowl
·         1 1/4 cups of milk chocolate chips (or semi-sweet if you prefer)
·         9 large strawberries
Stovetop directions   
1.       Melt the chocolate: Get your double boiler and fill the bottom pan half way with water and set it on the burner on high.  When the water comes to a simmer, put the double boiler pan on top and poor the chocolate chips into it.  Stir the chocolate with a heat proof spatula until the chocolate is smooth (about 3-5min).  When the chocolate is smooth, take the pan off the burner.  If the chocolate stays on the heat too long it will have a little bit of a white coloring to it when it dries (you don't want this).  The picture bellow shows the melted chocolate when it is almost completely melted.
 


2.       Dip the strawberries: Take the strawberries (after they have been washed and dried) by the leaves and dip them in the chocolate until they are nice and covered.  Put them on a greased plate or waxed paper and put them into the fridge so that the chocolate can harden (about 30min)
